Homemade Frittata

Made with eggs and packed with veggies and your favorite ingredients, a homemade frittata is the perfect solution when you need a quick and easy dinner.

Ingredients
  

  • 2-3 tbsp avocado oil
  • 12 eggs
  • 1/4 cup almond milk Dairy milk, heavy cream, or another milk alternative can be used as a substitute.
  • 4-6 cups cooked vegetables, greens, or potatoes
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1 cup cheese of your choice optional
  • 1/2 cup cooked meat of your choice optional

  • Spring Frittata asparagus, peas, chives, greens, swiss cheese
  • Breakfast Frittata bacon, onion, peppers, potatoes, greens
  • Zuppa Toscana ground italian sausage, kale, onion, potatoes
  • Tex Mex taco meat, onion, pepper, potatoes, cherry tomatoes, greens, salsa, cilantro
  • Greek ground lamb, red onion, zucchini, cherry tomatoes, dill, feta, spinach

Method
 

  1. Preheat oven to 350 degrees.
  2. Prior to preparing the frittata, any meat and potatoes being used should be fully cooked.
  3. In a large skillet, add the avocado oil and sauté any vegetables until soft. about 5-10 minutes
  4. While the vegetables are sautéing, crack the eggs and add them to a bowl. Add the almond milk, salt, and pepper, and beat with a fork.
  5. When the veggies are soft, remove from heat and make sure they are evenly distributed in the pan. Add any prepared meat and cheese at this time.
  6. Pour the egg mixture evenly over the ingredients.
  7. Place the skillet in the oven and bake for 30 minutes.
