Quick And Easy Dinner Frittata

A homemade frittata is the perfect solution when you need a quick and easy dinner. Serve with your favorite salad, a refreshing smoothie, or roasted veggies for a nutritious and filling meal.

Due to the chickens that have taken up residence in my backyard and the garden beds that I can’t seem to stop adding to our property, I find that for a large portion of the year I have an abundance of eggs and veggies.

In the past, I would ocassionally use those ingredients to make quiche for dinner, lunch, or even breakfast. They were delicious, but I found myself facing two problems.

The first was that I had to make homemade crust every time I made quiche, which meant that it wasn’t a quick meal to make. The second problem was that my daughter developed a sensitivity to gluten. I tried, but I still haven’t found or created a gluten free crust that is as good as our flaky quiche crust. So that sort of put an end to quiche around here.

Then one day I was tired, unprepared, and desperate for a dinner idea. I was in need of a quick and easy dinner. I opened the fridge and saw way too many eggs and decided it was time to give frittatas another try.

That was the day I fell in love with the simple frittata.

Aside from being delicious, I discovered frittatas have a few other perks.

  • I’m a frugal girl and frittatas fit the bill. If you have chickens and a garden, frittatas can be made completely from what is gathered on the property. Even if you don’t, aside from the eggs, it can easily be made with some basic ingredients that you already have, leftovers in the fridge, or hidden treasures found in the back of your freezer.
  • Frittatas can be packed with veggies. Just one frittata can harbor a ton of vegetables which makes it a great meal for feeding to kids.
  • Frittatas are the perfect option for a quick and easy dinner. As a busy mom, I am always looking for ways to get dinner on the table with minimal effort in a short amount of time. I can get a frittata in the oven in ten minutes!

Now we eat frittatas for dinner about once a week. The great thing about it is that frittatas are so versatile and the ingredients can be changed from week to week so we don’t get tired of eating them.

What Is The Difference Between A Quiche And A Frittata?

There are a few differences between a quiche and a frittata. A quiche is baked in a flaky crust in the oven. It is creamier in texture since it typically uses more dairy than a frittata. A frittata on the other hand is crustless, uses less dairy, and is typically started on the stovetop and transferred to the oven.

Frittata Flavor Combinations

  • Spring Frittata asparagus, peas, chives, greens, swiss cheese
  • Breakfast Frittata bacon, onion, peppers, potatoes, greens
  • Zuppa Toscana ground italian sausage, kale, onion, potatoes
  • Tex Mex taco meat, onion, pepper, potatoes, cherry tomatoes, greens, salsa, cilantro
  • Greek ground lamb, red onion, zucchini, cherry tomatoes, dill, feta, spinach
  • Garden Frittata red bell pepper, onion, greens, zucchini, broccoli, cauliflower, potato, eggplant

Tips For Making Frittatas

  • Use fresh or frozen vegetables. Be sure to sauté any fresh or frozen veggies before adding them to the frittata.
  • Precook all meat before adding to the frittata. A great way to save time and money is to try to set aside a little meat from dinner the night before.
  • Precook all potatoes.
  • As a time saver, I like to put my frittata straight in the oven rather than starting it on the stovetop.
  • Be sure to evenly distribute all ingredients in the skillet before adding the egg mixture. This will ensure that each piece of the frittata is full of flavor.
  • Our frittatas are dairy free around here due to food sensitivities. I found that as long as I include some potatoes and lots of caramelized onions with just about any combination, it still has amazing flavor.
  • Frittatas are a great way to include lots of nutritious sautéed greens in your diet. Some of our favorites are kale, spinach, chard, bok choy, beet greens, , mustard, and tatsoi.
  • Frittatas can be made without dairy or a dairy alternative if they are not available.

What Should I Serve With A Frittata For A Quick And Easy Dinner?

  • Fresh garden salad
  • Sliced avocado
  • Smoothie
  • Side of sautéed onions and homemade hash browns
  • Side of your favorite sautéed or roasted veggies

What Toppings Should I Serve?

  • Fresh pesto
  • Salsa
  • Hot sauce
  • Ketchup
  • Fresh herbs

Ingredients

  • 2-3 tbsp Avocado Oil
  • 12 Eggs This is just the right amount to fill a 12 inch cast iron skillet.
  • 1/4 Cup Almond Milk Substitute with dairy milk, heavy cream, or another milk alternative.
  • 4-6 Cups Cooked Vegetables, Greens, or Potatoes
  • 1 tsp. Black Pepper
  • 1/2 tsp. Salt
  • 1 Cup Cheese Type of cheese will vary based on other ingredients. (optional)
  • 1/2 Cup Cooked Meat Type of meat will vary based on other ingredients. (optional)

How To Make A Homemade Frittata

  1. Preheat oven to 350 degrees.
  2. Precook all meat and potatoes prior to preparing the frittata.
  3. In a large skillet, add the avocado oil and sauté any vegetables until soft. about 5-10 minutes
  4. While the vegetables are sautéing, crack the eggs and add them to a bowl. Add the almond milk, salt, and pepper, and beat with a fork.
  5. When the veggies are soft, remove from heat and evenly distribute in the pan. Add any prepared meat and cheese at this time.
  6. Pour the egg mixture evenly over the ingredients.
  7. Place the skillet in the oven and bake for 30 minutes.
