My husband’s grandmother, Grandma Goldie, was one of those special people. She was such a beautiful person inside and was full of love. She had a strong faith in God, an amazing life story, and I loved being around her.
Grandma Goldie had a few classic recipes that my husband grew up on and that me and my children grew to love. As an immigrant from Croatia, one of those recipes was her Croatian potato salad.

Made with a blend of salt and dehydrated vegetables, Vegeta is used in a wide variety of ways. It’s used to make soups and broths, and to season any number of things including veggies, meat, chicken, and fish.
Homemade Vegeta Seasoning Recipe
Vegeta does have a rather high salt content and a few additives. So if you would like to make a homemade version of Vegeta, try out the recipe below.
1. Wash and slice 2 small carrots, 1 parsnip, 1 medium potato, 3 stalks celery, and a small bunch fresh parsley.
2. Dehydrate in a dehydrator at 120 degrees for 12 hours.

3. Next, grind the dehydrated vegetables in a coffee grinder until they are in powder form.
4. Finally, add the dehydrated powder to a small mason jar. Add 1/4 tsp salt, 1/4 tsp. black pepper, and 1/8 tsp nutmeg. Mix well.

5. Place a lid on the jar for storage.

1 cup water
1 tbsp mustard
3 tsp sugar
3 tsp Vegeta
1/3 cup olive oil
2 tbsp white vinegar

3 lbs yellow potatoes
3/4 cup green onions (sliced)
How To Cook Potatoes For Potato Salad
- Before cooking the potatoes, give them a good scrub to remove any dirt.
- Fill a large pot about three fourths of the way with water. Cover with a lid and bring to a boil.
- Once the water is boiling, boil the potatoes for about 15 minutes. Cooking time will depend on the size of the potatoes. They are done when a butter knife can be easily inserted into the potatoes.
- Using a slotted spoon, remove the potatoes from the water and let them cool on a plate.
Potato Salad Dressing
- While the potatoes are cooling, make the dressing for the potato salad. Mix the water, mustard, sugar, and Vegeta in a small pot.
- Bring the ingredients to a boil.
- After it comes to a boil, give it a mix, remove from the heat, and set aside for a few minutes.
How To Make Potato Salad
- Rinse and slice the green onions. Set aside.
- Remove the skins of the potatoes with a paring knife once they have been boiled, cooled, and can be handled.
- Slice the potatoes into thin slices and place into a large bowl.
- Top with the sliced green onions.
- Pour the dressing ingredients that were boiled in the pot on top of the potatoes. Then add the vinegar and oil to the potatoes.
- Gently fold the potatoes to coat them with the dressing and the vinegar and oil.
- Add salt and pepper to taste.
