Healthy Kid-Friendly Meatball Soup

Made with bone broth and packed with vegetables, this meatball soup is quick, easy, and delicious. It is the perfect healthy, kid-friendly meal.

Like a lot of people around the world, our school days have looked quite different around here this year. My kids have been home for remote learning and I have been here guiding and feeding them.

One thing that I have noticed this year is how much food my kids can actually eat! It seems like as soon as I make them something to eat and get the kitchen cleaned up, one of them is already asking for a snack or the next meal.

I have learned that if I want them eating healthy, whole foods on the regular, then I have to have quick, healthy, kid-friendly meals and snack ideas ready to go.

I have a variety of quick and easy meals that are also healthy and delicious that my kids love. This healthy, kid-friendly meatball soup is one of their favorites and mine too. My mom would make this recipe for us when we would come home to visit and I have been making it ever since.

I often make it for us for lunch because I can pack it with vegetables, it is super easy, and it tastes great.

Tips For Making Healthy, Kid Friendly Meatball Soup

  • Try making 2-3 pounds of small, homemade meatballs at once and store them in the freezer. I try to always have some in the freezer to use when I have to make a quick meal.
  • Cut your meatballs into halves or fourths, depending on the size. This allows you to get more bites with a bit of meatball in it, and you can use less meatballs overall, which brings down the overall cost of the meal.
  • Start making homemade bone broth as part of your weekly routine. Once you start making it part of your regular cooking routine, you’ll always have it when you want it. There is no comparison between the flavors of homemade bone broth and store bought, not to mention the benefits of bone broth.
  • I prefer eating green beans on the softer side. If you prefer them to be more firm, let the soup simmer for 15 minutes before adding the green beans.

Ingredients

  • 4-5 carrots, sliced
  • 4 medium potatoes, diced
  • 2 cups whole frozen tomatoes or one 15 oz. can diced tomatoes
  • 6 oz. tomato paste
  • 3-4 cups frozen green beans
  • 2-3 cups homemade frozen meatballs
  • 6 cups homemade beef bone broth
  • 1 1/2 tbsp. Italian seasoning
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

How To Make Meatball Soup

  1. Chop the carrots and potatoes into bite sized pieces.
  2. Add the carrots, potatoes, and the rest of the ingredients to a dutch oven.
  3. Place the lid on the dutch oven and bring to a boil.
  4. Reduce the heat, cover, and simmer for 30 minutes. All of the ingredients will be cooked and ready to eat after 30 minutes. However, when I have more time, I’ll let it go a bit longer.
  5. Add additional salt and pepper to taste.
