The Best Chicken And Rice

This chicken and rice recipe is the perfect warming, comforting meal for cold winter days. Made with homemade chicken bone broth, veggies, brown rice, chicken , and spices, it is a family favorite that is not only nourishing but delicious too!

Is there anything better in the winter months than sitting down to a nice warm comforting meal? Personally, I can’t think of anything better. That’s why this time of year I love making this chicken and rice recipe. It is not only warm and comforting, but so delicious too!

I’m not sure whether to call it a soup, a stew, or something else. Initially, it could pass as a low broth soup or a nice hearty stew. However, if we are fortunate enough to have any leftovers, the next day all of that broth is gone after it has been soaked up by the rice. What remains? Some form of risotto? To be honest, that’s really not that important. What is important is that the house smells amazing as it simmers on the stove! It’s also super easy to make. The best part about it is my kids get really excited when they find out that we are having chicken and rice for dinner!

Tips For Making Chicken And Rice

  • This recipe calls for brown rice, but feel free to use whatever rice you have on hand.
  • I like to roast a whole chicken, portion out the meat, and store it in the freezer so I always have it on hand for quick and easy meal prep. If you don’t have any precooked chicken in the freezer, or didn’t pick up a rotisserie on the way home, dice up 2 small chicken breasts season with salt and pepper, and throw them in the pot to sauté with the veggies.
  • If you are short on time, this meal can be eaten before the 55 minute cooking time is up. It can be eaten as soon as the rice is fully cooked, along with any chicken that wasn’t precooked. This is just one of those meals that tastes better the longer it simmers.
  • This recipe can be made with store bought bone broth, but it is so much more flavorful when made with homemade chicken bone broth. If you haven’t made your own homemade version, I encourage you to give it a try. It is so easy to make and well worth the effort!
  • To balance out this amazing meal, I love serving this dish with a delicious chopped salad.
  • This is a great kid-friendly meal that is perfect for sending to school in a thermos for a nice warming lunch.

Ingredients

  • 1-2 tbsp avocado oil
  • 2 stalks celery
  • 3 carrots
  • 1 medium onion
  • 4 cloves garlic
  • 1 cup brown rice
  • 2 cups precooked chicken
  • 5 cups chicken bone broth
  • 1/2 tsp pepper 1 tsp salt
  • 1/2 tsp thyme
  • small bunch fresh parsley or 1 tbsp dried parsley (optional)

How To Make Chicken And Rice

  1. Peel the carrots and dice the carrots, celery, and onion. Add to a large dutch oven along with the avocado oil.
  2. Start to sauté the vegetables. Stir often to avoid burning.
  3. Peel and chop the garlic. Add to the vegetables. Continue to sauté until the vegetables start to soften. This should only take about five minutes.
  4. Add the broth and precooked chicken cut into bit sized pieces.
  5. In a fine mesh sieve, rinse the rice and add it to the pot.
  6. Add the salt, pepper, and thyme, and mix the ingredients in the pot. Turn the burner up until the broth begins to boil. About five minutes.
  7. After the broth starts to boil, place the lid on the pot and lower the heat to a simmer. Simmer on low for 45-55 minutes.
  8. Add additional salt and pepper to taste. Top with fresh parsley or dried parsley for color.

Notes

If you do not have precooked chicken, add 1-2 uncooked chicken breasts that have been cut into bite sized pieces to the pot while the vegetables are sautéing. Continue until the vegetables are soft and the sides of the chicken are slightly browned. The chicken will continue to cook as the chicken and rice simmers.
