When my kids were really young I discovered by accident that making homemade soup was the best way to get them to happily eat vegetables.
Needless to say, we ate a lot of soup in my house.
One of my favorites is our kid-friendly quinoa, greens, and basil soup. My husband still jokes about that phase that I went through where we ate this soup every week without fail for about two years. Hey, why fix something if it’s not broke?
Now I tend to make it less frequently, but after ten years of making this soup, I have yet to hear any complaints.
Made with healthy bone broth, hearty chickpeas, and a ton of greens, this soup is both healthy and delicious.
It’s the perfect meal to eat during these cold winter months.
Tips For Making
- If you don’t have bone broth, vegetable or chicken broth will work as well.
- Instead of using diced tomatoes, try freezing clean, whole tomatoes when you have an abundance in your garden. I use these all winter long in soups, chilis, and anything else that requires diced tomatoes.
- You can substitute the quinoa for pasta, barley, or farro.
- If you like a lot of broth in your soup, only use 1/2 cup of quinoa.
- Top with freshly grated parmesan cheese to make this soup even more delicious.

- Dutch oven or stock pot
- Ladle

Ingredients
- 2 tbsp. avocado or olive oil
- 1 medium onion
- 3 cloves garlic
- 4 carrots
- 1 can (14 1/2 oz) of diced tomatoes
- 8 cups bone broth
- 8 cups chopped greens (Spinach, kale, or chard will work well. I use whatever I have in my garden or freezer. )
- 2 cups cooked garbanzo beans or 1 (15.5 oz) can
- 1 large bunch of chopped fresh basil or 3-4 tbsp. dried basil
- 3/4 cup quinoa
- 1 tsp. salt
- 1/2 tsp. pepper
- freshly grated parmesan cheese (optional)
How To Make Kid-Friendly Quinoa, Greens, and Basil Soup

In a large pot or Dutch oven, add the oil and sauté the diced carrots, onion, and garlic. Let this cook until the onions are translucent and the carrots start to soften. This should take about ten minutes. Stir frequently so the garlic doesn’t burn.
Once the onions and carrots begin to soften, add the diced tomatoes and the bone broth.
Add the basil, chopped greens, quinoa and chickpeas. Remember to drain and rinse the chickpeas if you are using canned beans.
Bring the soup to a boil. Then reduce the heat, cover, and simmer for 30 minutes.
Add additional salt and pepper to taste.
Try topping with some freshly grated parmesan cheese. (optional)
